Brewing Yeasts:

To make good beer it's essential that you 'pitch' high quantities (billions of cells) of a high-quality yeast strain. Ale strains ferment at warm temps, while Lager strains ferment at cooler temps. Yeasts are in dry or liquid form.

Dry Yeasts:

Dry yeasts have a longer shelflife and can withstand any temperature extremes better than liquid yeasts. Dry yeasts have high cell counts and start quickly, once rehydrated.

Liquid Yeasts:

Liquid yeast strains can make the best beer, hands down. The reason is because liquid yeasts are grown in completely sterile environments free from unwanted bacteria.
